Mango Tango in the Morning
So, we've been thinking to have some fruits for breakfast. Strawberries and other type of berries are fancy, but for a change, this time we want it to be local or tropical fruits. We finally go with mango because it is versatile, pack with nutrients and we love the yellow. One fruit, 3 recipes. All are really simple menus and they taste awesome too. If you have mangoes at home, please try all these super easy recipes.
Mango Tango Pancakes
1 egg
1 cup of self-raising flour
1 cup of milk (see intro)
A pinch of salt
25g butter
2 ripe mangoes
Yoghurt
Just crack the egg into a large mixing bowl, add your flour, milk and a pinch of salt.Whisk everything together until you’ve got a lovely, smooth batter. Put a large frying pan on a medium heat and add half the butter.
When the butter has melted and the pan is nice and hot, use a ladle to spoon the batter into the pan.
Each ladleful will make 1 pancake.Cook for 1 to 2 minutes and use a spatula to turn them over when they start to brown on the bottom. Transfer them to a plate and serve with a dollop of flavoured yoghurt and the diced fresh mangoes on top. Done!
Easy Mango Parfait
3 cups diced mango (about 2 pounds mangoes, peeled and cubed)
2 tablespoons fresh lime juice
2 cups vanilla yogurt
In a food processor or blender puree the mango until smooth and transfer it to a bowl. Add the lime juice to the mango puree and stir to combine. Chill until ready to assemble parfaits. To assemble parfaits: In parfait or stemmed glasses spoon a 1-inch-thick layer of yogurt, top with a layer of mango and repeat layering. Chill until ready to serve. Garnish with diced mangoes.
Mini Fish Burger with Mango Mayonnaise
Mango Mayo :
Half cup of mango puree
Half cup of mayonnaise
1 tablespoon of lime juice
Dinner Rolls or Mini buns
Fish fillets cut into squares, stir fried with olive oil
Your favorite salads
Fress dills to garnish
